The problem is that food only temporarily suppresses the emotion—it doesn't process or release it. The feeling returns (often with added guilt and shame), triggering another urge to eat. This creates a cycle: emotion → eat → guilt → more emotion → eat more. Willpower fails because you're not addressing the actual problem. You're trying to use food as an emotional regulation tool when it's designed for physical nourishment.
